Peter Gilmore

"Outback Pride is the number one supplier of native greens to top chefs all around Australia. Mike and Gayle Quarmby are true innovators in their field. Outback Pride's native greens are of exceptional quality and freshness and Outback Pride Fresh is my supplier of choice." - Peter Gilmore

"I have been determined to explore which native plants are available and to see if I can source them in their fresh form. Through this exploration I found Mike and Gayle Quarmby, who have done extensive work in this field.

Mike and Gayle now supply a number of chefs in Sydney and Melbourne with fresh, seasonal native Australian produce; such as lemon aspen, which is much more subtle and delicious in its fresh form than when it was previously available dried or frozen. Fresh muntries, which taste and look like miniature apples the size of a marble, are now picked and distributed seasonally between January and March. Native coastal greens are grown by Mike and Gayle at their farm in the Coorong area of South Australia and feature on a dish with Murray cod." - Organum, by Peter Gilmore

About Peter

Organum by Peter GilmorePeter Gilmore is the Executive Chef of Quay, and its sister restaurant Bennelong, both situated at the edge of Sydney Harbour. Peter’s creative and original cuisine has seen Quay receive an unprecedented number of Australian and international awards, and he is a leading figure in Australia’s vibrant food scene.

In his new book Organum, Peter invites the reader to share in his private obsession with nature - when not in the kitchen at Sydney's Quay restaurant, he is working in his experimental garden where he grows a huge array of edible plant species. Peter also introduces us to the many influences on his cooking, and to the people who grow, catch and source key ingredients. Images include intensely beautiful food and ingredient shots, as well as producers and produce photographed on location, including Mike and Gayle Quarmby of Outback Pride Fresh.
