Finger Lime

Finger Limes (Microcitrus australasica) are one of the Australian native rainforest citrus, relatively uncommon in the wild but now sustainably cultivated in a variety of colours.

It has a short fruiting season in mid-summer but after snap freezing keeps extremely well. Once thawed, it keeps its crisp texture and maintains the capsules of flavour, often called ‘ bush caviar’.

Even though this is a rainforest plant, it successfully is producing fruit at the Reedy Creek Nursery orchard.

Uses: A delightful lemon lime burst in the form of glossy capsules of flavour in a variety of colours from pink, through to yellow and green. Wonderful as a garnish on seafood and desserts.
